We’re sure we’ve mentioned before that we’re something of a well-travelled lot at Home Water Coolers, and along the way we’ve picked up a number of astoundingly good recipes to share with our friends and families back here en Angleterre. One of the best ones, discovered whilst our darling Sophie was working as a chalet host for the ski season in the French Alps, is the banana bread that we’ve come to love (and enjoy on more than one occasion, lucky us) to sit down with, along with a super cup of tea made in seconds flat from the hot tap of our home water cooler. And as we’re feeling generous, we thought we’d share it with you:
Group 1 ingredients:
2 tbsp melted butter
1 tbsp milk
2 mashed bananas
1 egg
Group 2 ingredients:
1 and ½ cups plain flour
½ tsp bicarbonate of soda
¼ tsp baking powder
½ cup sugar
¼ tsp salt
How to:
1) Mix group 1 ingredients together; add group 2 and mix well.
2) Pour mixture into loaf tin; place slices of banana on top.
3) Bake for 25-30mins at 200°C, or until knife comes out clean. Decorate with icing sugar once cooled.
